The Soul of Dieci

Born in 1995, Jordan Giusti has chosen to center his life’s work around his passion for cooking, bringing it to life through his project: Dieci Ristorante in Nepi. His love for food began in childhood, when he would make gnocchi with his grandmother. His first kitchen tool, a wooden rolling pin, was crafted by his father, who also played a pivotal role in creating every detail of the restaurant—from the tables to the paneling, from the trays to the paintings—shaping an environment that reflects a deep passion for craftsmanship and the warmth of family.

Arriving in Nepi, Jordan brought with him the cherished memories of home cooking and a desire to reinterpret the flavors of the past. Though this is his first time engaging with guests in a restaurant setting, he already stands out for the character and balance that define his dishes—like the “Spaghettoro alla Cipolla di Nepi” (Golden Spaghetti with Nepi Onion), which evokes the essence of the region through the unmistakable taste of Nepi’s onion and the golden pasta from Verrigni.

His cuisine, which celebrates simple ingredients, is a constant weaving of modernity and tradition. Dishes like the “Sgombro con mortadella e melanzane” (Mackerel with Mortadella and Eggplant) showcase his exceptional technical skills, balance, and a forward-looking vision.

Jordan has turned the art of dining into a creative challenge, always with a keen eye on elevating the region and the products it proudly offers. His determination, talent, and empathy guide him daily in preserving and sharing the story of Lazio’s gastronomic landscape.
